IN ORDER: 





















THE ULTIMATE BIRTHDAY CUPCAKES

  1. Make up vanilla cupcake batter base & frosting base
  2. Divide into equal parts to create different styles of cupcakes 
  3. Decorate, sing the birthday song, devour.  

CUPCAKE BATTER: 
  • 1 cup unsweetened almond milk 
  • 1 tsp apple cider vinegar
  • 1/2 cup softened becel vegan butter
  • 1 cup of stevia 
  • 1 tsp pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

FROSTING BASE:
  • 1/2 cup becel vegan butter, whipped 
  • 3 cups powdered icing sugar
  • 1/4 tsp vanilla extract

BAKING INSTRUCTIONS: 
  1. Preheat oven to 350.
  2. Combine almond milk and apple cider vinegar and set aside for a few minutes.
  3. In a large mixing bowl, combine softened butter, almond milk mixture and beat. 
  4. Then add sugar and vanilla and stir until fully mixed.
  5. Add in the rest of the ingredients, flour, baking soda, baking powder, salt, and mix or beat until there are no lumps left.  
  6. SEPERATE BATTER INTO DIFFERENT BOWLS FOR EACH FLAVOUR 

CINNAMON TOAST CRUNCH CUPCAKES 
 -  Add crushed cereal and cinnamon to batter 
 -  Scoop into 4 cupcake tray sections lined with cupcake filters

FRENCH TOAST CRUNCH CUPCAKES 
 -  Add vegan rainbow sprinkles and French toast crunch cereal to batter 
 -  Scoop into 4 cupcake tray sections lined with cupcake filters 

PEANUT BUTTER OREO CUPCAKES
 -  Place ONE FULL OREO to bottom of cupcake filter 
 -  Add vegan chocolate sprinkles to cupcake batter and mix lightly
 -  Fill rest of cupcake filter to halfway point 



    
   7. Bake cupcakes for 20-25 minutes, or until light golden brown.  
   8. While cupcakes bake make icing base and separate into THREE EQUAL PARTS 

CINNAMON TOAST CRUNCH CUPCAKES 
 -  Mix in cinnamon and vanilla extract to icing base



FRENCH TOAST CRUNCH CUPCAKES 
 -  Mix in blue food colouring to icing base



PEANUT BUTTER OREO CUPCAKES
 -  Mix in 1 tbsp of peanut butter to icing base



   9.  Place cupcakes on baking rack to cool for 10 minutes 
  10. Ice each appropriate cupcake with designated icing mixture.  Decorate with leftover cereal bits, Oreos, sprinkles, etc. to your own linking. 
  11.  Try not to eat them until you give them to the birthday girl/guy.  End up eating three and scattering candles to it's not obvious the three flavours are missing.
