Spring weather is officially here and I'm welcoming it with open arms and rolled up vintage jeans. With the nicer weather slowly peeking its way over the horizons and the sun staying out a few extra moments of the day, I find the idea of string lit summer patios and clinking glasses with friends leaves an early summer buzz lingering in the air. Aside from a standard BBQ (pass the grilled corn and veggie burgs please), I'd have to say, splitting a cheesy, garlic pizza and a bottle of rosé has to be one of my favourite ways to end a summer afternoon. Not to mention for some reason, I've been having some serious Italy wanderlust working it's way through my bones.
I may or may not have even started budgeted out the cost of a trip so I can get my hands on some true Italian pizza and wine.

But I'm getting ahead of my self. For now, the "Confirm Payment" button has been left untouched and the "Preheat" button was hit instead. To tie myself over while I revel in the idea of a potential adventure down the cobblestones streets of Italy, I'm sharing with you my absolute favourite vegan pizza recipes, along with my bucket list of things I want to fill my yellow rayed days with!
Summer Bucketlist
When I recently asked you guys what you wanted to see more of on my blog and channel, a big topic that I noticed popping up was sharing more bucket list and travel related content. I figured I may as well go ahead and paste my summer bucket list from the notes in my phone to the world of the interweb - not only to get your own calendars popping, but to see if I can actually follow through on a lot of the memories I can see this summer creating.
I don't know why, but this year I've felt this insistent need to make the most of every month and each season. Summer is rolling in with no difference. Although my ideal sunset BBQ's by the water in a small beach cottage may stem from reading a little too much Nicolas Sparks in the last few weeks, I do want to try and manifest a summer I won't forget. Here are a few things you'll find on my summer bucket list this year:
- Chicago Road Trip (deep dish anyone?)
- Hit up an Amusement Park & Ride Roller Coasters
- Do an Outdoor Yoga Class
- Go Camping & Have a Massive Bonfire
- Take a Surfing Lesson (+ helps with continuing to push past fear of the ocean and dig into my fishy pisces roots)
- Regularly Check out Farmers Markets & Buy Local Produce/Flowers
- Go Sky Diving - I say this every year... time to actually do it
- Attend As Many Concerts as Humanly Possible (Taylor Swift already in the books)
- Go Saturday Afternoon, Brunch Pants + Big Sunglasses Patio Hopping! - "hi, yes, bottomless sangria and a hummus platter please."
- Hit the BEACH! A! LOT!
- Book an Italy Trip **This is a "put it on the list in hopes of manifesting it" one**
I'm sure more will add to the list as the temperatures continue to rise, but even if I hit half of this by the ending days of August, I will feel without a doubt, warm-weather content.
What's on your summer bucket list?
MY FAVOURITE VEGAN PIZZA'S
Sun-dried Tomato & "Chicken"
Ingredients:
Garlic Stuffed Olives
Sweet Onion
Sun-dried Tomato
St. Yves Vegan Chicken Tenders
Fresh Basil
Vegan Shredded Cheese
Pizza Sauce
Pizza Dough or Mini Pita Breads (if you're making mini or single serve pizza's)
Step 1 - Preheat oven to 425F
Step 2 - Layer ingredients while you pour yourself and any others a generous serving of rosé. Put on the latest playlist that gets you bopping around your kitchen.
Step 3 - Place in oven for approximately 10 minutes, leaving you ample time to snack on left-over olives and discuss the latest met gala outfits and couple reveals.
Step 4 - Remove pizza from oven and let it cool before placing fresh basil leaves that truly make no difference aside from aesthetic reasons and because you are a legitimate, Italian chef, ok?
Step 5 - Cut into slices and serve.
( Garlic dipping sauce optional)
- 2 gloves garlic
- 1 tbsp vegan butter
- 1/4 tsp dried thyme
- 1/4 tsp dried basil
- 3 tbsp vegan mayo
- A pinch of salt
CLASSIC PEPPERONI
Ingredients:
Roasted Garlic
Tomato or Pizza Sauve
1 TBS of Hummus (mixed into pizza sauce for extra cheesy flavour)
St. Yves Vegan Pepperoni's
Mix of Vegan Shredded Cheeses
Pizza Sauce
Pizza Dough or Mini Pita Breads (if you're making mini or single serve pizza's)
Step 1 - Preheat oven to 425F
Step 2 - Layer sauce and hummus mix, roasted garlic, cheese, and then pepperoni's. Snack on remaining pepperoni's cause they actually really good and heart burn is totally worth it.
Step 3 - Place into the oven for 10 minutes to which you then change your playlist over to a more chill, indie vibe.
Step 4 - Remove and cut into slices before serving. Highly recommend pairing this one with a white wine. My personal favourite lately - Oyster Bay Sauvignon Blanc
Step 5 - Bless the pizza gods and the creators of vegan cheese as you plan your next summer adventure.

Hi Kalyn I’m Veronica and I suggest you for your italian trip to stay a few days in Venice! I live there and I will never get tired of the decadent beauty of this city. There are a lot of little islands to visit and museums. But I have to admit that also the south is stunning.

Hi Kalyn :) I'm Elena and I'm from Italy as well as Veronica in the other comment, but I'm from Turin and I'd really like to suggest you to spend a couple of days here, too. It's a beautiful city for Italian history, art and food! But I think that every Italian would suggest you to visit his/her city because Italy is beautiful from the Alpes to Sicily! I recommend you to add to your bucketlist a festival called "Burning Man" I never have been here but I saw the movie ("The girl from the song" I totally recommend you😍) and I started to searching information about that festival and Omg😍 I fell in love with "Burning Man Festival".
